Ingredients:
Dry:
2 cups whole wheat flour
1 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 1/2 tsp cinnamon
1 tsp allspice
Wet:
2/3 cup vegan buttermilk (combine 160 ml soy milk with 5 ml apple cider vinegar and set aside to curdle)
1/2 cup very ripe banana, mashed with a fork
1/3 cup agave
2 tsp vanilla extract
Add-ins:
2 medium ripe pears, chopped into cubes
Instructions:
1. Heat oven to 190° C and line a 12-cup muffin pan with paper liners (or grease the pan).
2. Add all dry ingredients to a bowl and whisk to combine.
3. Add all wet ingredients to a bowl and whisk to combine.
4. Add the wet mixture to the dry, and mix until just combined.
5. Add the pears to the batter and gently fold to combine.
6. Spoon batter into muffin paper liners.
7. Bake for 20 minutes, or until a toothpick inserted into the centre comes out clean.
8. Allow to cool before serving.
